There are amateur lightweight stun gun constructions made of disposable
camera flashes. Fairly weak but even then the kick is harsh; when you try
to repair your broken digital camera, BEWARE of the flash capacitor.
(Ouch.)

Anything can be turned into anything as long as the second anything fits
into the casing of the first anything. This applies to stun guns, to
"classical" chemical matter accelerators, to bugs.

You may like to take a look at a reverse-engineered Type 618 stun gun,
made in China and sold in many countries.
http://shaddack.twibright.com/projects/reveng_type618stungun/
(It is inexpensive and contains a nice potted high voltage generator
module that may have use for more than just self-defense purposes; a small
Tesla coil is an example. Or maybe powering a low-power x-ray tube?)

Neutralizing a taser/stun gun attack is more difficult; a handheld device
could be used but I think the only viable strategy would be mechanically
blocking it.

However, taser-resistant clothing could be made fairly easily. There are
vendors of conductive cloths (e.g. lessemf.com); use such material as a
liner of your jacket. That will offer the high voltage current an easier
path than your body. I think there's even some patent for that. The
drawback is the fairly high cost of such fabrics.

Question for local specialists: could such conductive fabric provide a
degree of privacy protection against see-through-clothes terahertz
cameras? What degree of protection would be provided against the 95 GHz
"pain ray" Active Denial System?

Smartphones differ from "normal" computers only by form factor and
built-in cellular wireless. Therefore they can be used for remote control
of things, like any other device that is able to relay user's wishes to
the vehicle control/guidance system. A model airplane can be built with
the Gumstix computer; some models of Gumstix contain a Bluetooth
interface. Then it can be controlled by software running on a
Bluetooth-capable cellphone.

However a phone-based attack on a conventional aircraft can be pretty much
ruled out; those birds have to be engineered to be resistant to common
sources of EMI and do not have critical interfaces accessible wirelessly.
The peaceful coexistence of airports and cellular towers busily serving
thousands of waiting passengers right next to taking off and landing
airplanes could serve as a proof.

The Air France flight crash can be explained conventionally. Bad weather
conditions, iced speed sensors, perhaps a lightning, and flight in an
altitude where the window between stall and overspeed is narrow can
explain the lethal mishap without need for a conventional attack. Nature
is fairly hostile even without need for human help. We'll see more when/if
the black boxes will be found.
